Reduce the risk
Custom does not have to mean a huge project. Start with a minimum viable product — the smallest version that solves the main problem — and use it for real. Then improve it in small steps based on what you learn.
Before you sign anything: make sure the contract says you own the source code and data, and that documentation is included.
